Quick and Easy New Mexican Burrito Bowl

For an easy tasty meal, try a deconstructed chicken burrito. The New Mexican burrito bowl is always a crowd pleaser and it's super simple to make. Save time by using rotisserie chicken right off the bone into your burrito bowl. Add your favorite toppings like black beans (rinsed and drained), shredded cheese,diced tomatoes, sour cream and avocado. For an extra kick toss in some New Mexican chile.


12 ounces of cooked chicken

Cooked white rice

Shredded lettuce

Black beans

½ cup shredded cheddar cheese

1 avocado

¼ cup sour cream

Cilantro, chile or jalapenos (to taste)


Cook the white rice on the stove top. Add in your cooked or rotisserie store-bought chicken

Scoop the cooked rice into the bottom of the bowl.

Add the flavorful toppings (beans, cheese, lettuce, avocado, sour cream and tomatoes)

Finish by adding a little spice like green,red or "Christmas"(chile), jalapenos and cilantro on top. Don't forget to add classic New Mexican flavors like roasted garlic, onion, corn and Calabasitas.
