Springtime is the last opportunity for us Floridians to get out and explore this beautiful state before the 90° weather sets in for the foreseeable future. Hiking, biking, kayaking, end-of-the-year field trips with your kids, or day excursions to the beach are all amazing ways to spend time outdoors and away from the mundane. However, mid-day energy crashes can put a damper on your adventure. While packaged cookies, crackers, and granola bars can certainly curb hunger pains, they only delay dragging feet, and their ingredients often miss the mark on “healthy.” But have no fear, Girl in the Green Apron has the perfect 5-ingredient snack to keep you alert and energized on your next adventure!



1 cup salted Cashews

1/3 cup unsweetened Shredded Coconut

2 large Medjool Dates, pitted

¼ tsp Cinnamon

¼ tsp Pure Vanilla Extract

¼ tsp Pure Almond Extract

1 tbs Water


  1. In a food processor, add coconut, cashews, and dates and blend on high for 30 seconds, or until everything is evenly chopped and combined.
  2. Add the remaining ingredients and blend until a sticky mixture comes together into a ball.
  3. Roll mixture into 1 TBS sized balls and coat with more shredded coconut (or cocoa powder for any chocolate lovers out there!)
