Hiking, biking, kayaking, end-of-the-year field trips with your kids, or day excursions to the beach are all amazing ways to spend time outdoors and away from the mundane. However, mid-day energy crashes can put a damper on your adventure. COCONUT CASHEW ENERGY BITES
1 cup salted Cashews
1/3 cup unsweetened Shredded Coconut
2 large Medjool Dates, pitted
¼ tsp Cinnamon
¼ tsp Pure Vanilla Extract
¼ tsp Pure Almond Extract
1 tbs Water
- In a food processor, add coconut, cashews, and dates and blend on high for 30 seconds, or until everything is evenly chopped and combined.
- Add the remaining ingredients and blend until a sticky mixture comes together into a ball.
- Roll mixture into 1 TBS sized balls and coat with more shredded coconut (or cocoa powder for any chocolate lovers out there!)
