Fire up the Fajitas

Easy-To-Make Fajitas Gives Weeknights a Whole New Flame

Try out this chicken fajitas recipe tonight for a healthy meal! 

Ingredients:

1 ½ pounds of chicken breast tenders

1 yellow pepper, sliced into ¼ inch slices

1 red bell pepper, sliced into ¼ inch slices

1 orange bell pepper, sliced into ¼ inch slices

1 small red onion, sliced into ¼ inch slices

1 ½ tablespoons of extra virgin olive oil

1 teaspoon of kosher salt

Several turns of freshly ground pepper

2 teaspoons of chili powder

½ teaspoon of garlic powder

½ teaspoon of onion powder

½ teaspoon of ground cumin

½ teaspoon of smoked paprika

1 lime for garnish

Instructions:

  1. Preheat oven to 425 degrees
  2. In a large bowl, combine onion, bell pepper, chicken tenders, olive oil, salt and pepper, and spices. Toss to combine. 
  3. Spray baking sheet with non-stick cooking spray. 
  4. Spread chicken, bell peppers, and onions on baking sheet. 
  5. Cook at 425 degrees for about 15 minutes, until chicken reaches 165 degrees. 
  6. Keeping the chicken in the oven, add tortillas wrapped in tinfoil to warm for 5 minutes. 
  7. Remove the tortillas. 
  8. Turn on the broiler and cook for an additional 1-2 minutes, giving the items a slight char. Watch carefully to make sure they don’t burn. 
  9. Plate the tortillas, layering on the chicken and bell peppers/onion mixture and squeeze a hint of lime. Enjoy!
