Dandelion Fritters

Spring's first flower makes a tasty treat

What to do with dandelions? If your lawn is not chemically fertilized, the blossoms can make a tasty treat.

Why eat dandelions? Traditionally these plants have been welcomed as some of the first fresh greens in spring; they are highly nutritious and popular as a folk remedy. The recipe below is scalable, so pick as many or as few flowers as you like.

Ingredients

2 cups all-purpose flour or bread crumbs

2 tablespoons seasoned salt

1 tablespoon ground black pepper

Other spices or seasoned salt to taste. We like a bit of Old Bay.

4 eggs 

80 dandelion blossoms, stems removed (from untreated areas)

½ cup butter

Directions

Combine the flour, seasoned salt, and pepper in a mixing bowl; set aside. Beat the eggs in a mixing bowl.

Melt the butter in a large skillet over medium heat. Dip dandelion flowers first in beaten egg mixture, then in flavored flour. Cook the dandelions in the melted butter until golden brown, stirring occasionally, about 5 minutes. Drain on a paper towel lined plate.
