- A gnocchi board is a useful tool for creating the ridges on the dumplings, but it's not necessary. A fork works just fine.
- Boil the potatoes and drain them well. Baked potatoes work well too. Leftover mashed potatoes aren't recommended because they contain other ingredients that can alter the dough's consistency.
- Mash the potatoes well either by hand or using a potato ricer.
