Nello's Ahwatukee Pomodoro Bruschetta

Create this classic at home

INGREDIENTS:

Pomo mix
1 cup small diced tomatoes
¼ cup cold tomato sauce
1 teaspoon finely chopped basil
1 teaspoon finely chopped oregano
1 teaspoon minced garlic
1 tablespoon minced shallot
½ tablespoon balsamic vinegar
½ teaspoon salt
½ teaspoon pepper

6 slices from a baguette roll (sliced into rounds)
6 pieces of thinly sliced cucumber
2oz balsamic reduction
1 teaspoon shredded Reggiano cheese
1 teaspoon chopped parsley

DIRECTIONS:


1. Mix all ingredients for Pomo mix and allow it to marinate in a fridge for 30 minutes.
2. After the Pomo is ready lightly toast the slices of bread. Divide the Pomo mix evenly
over the top of each piece of bread.
3. Roll up your cucumber slice and place it over the top of each piece of bread.
4. Garnish each piece of bread with a drizzle of the balsamic reduction, Reggiano and parsley.
