GRILLED PEACHES WITH APRICOT JAM AND ICE CREAM
Visit any local farmers’ market during the Summer and you are sure to see a huge display of fresh, juicy peaches. This recipe for Grilled Peaches is perfect for those warm summer evening sugar cravings.
Choose peaches that are ripe, but not too soft. A bit of firmness will help the peaches stand up to the hot grill.
INGREDIENTS
- 4 to 5 peaches, halved
- 5 tablespoons butter, salted
- 2 tablespoons apricot jam
- 1 teaspoon vanilla extract
- 2 teaspoons cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground allspice
- 1 pint vanilla bean ice cream
- ½ cup granola, crushed
- nonstick spray
- fresh mint or basil, for garnish
INSTRUCTIONS
Melt the butter in a saucepan. Allow the butter to turn a medium-brown color. As soon as you smell a nutty aroma, remove from heat. Pour into a bowl. Whisk in the apricot jam, vanilla, nutmeg, and allspice.
Fire up the grill, or grill pan. Clean out just a bit of the inner flesh of the pitted peach halves. Spray the grill grate with non-stick spray. Place the peaches skin-side down and grill for about two to three minutes. Flip and allow the flesh side to gather perfect grill markets. Two minutes, at best.
Place the peaches on a serving platter, flesh side up. Spoon on a bit of the apricot brown butter mixture. Top each with a spoonful of ice cream. Sprinkle with crushed granola. Garnish with fresh basil or mint leaves. Drizzle the entire platter with any remaining butter mixture.
