Sesame Cold Noodles

A perfect spring recipe, both tasty and refreshing


Ingredients for Peanut Sauce:

  • 1/2 cup smooth peanut butter
  • 2 tbsp. soy sauce
  • 2 tsp. white sugar
  • 1 tsp. minced garlic
  • 1/2 cup water
  • 1/8 cup rice vinegar
  • 1/2 tsp. sesame oil
  • 1/16 cup peanut oil
  • bit of shaved fresh ginger (to taste)
  • 2 green scallion onions (diced)

Other Ingredients:

  • 3/8 cup salted peanuts, chopped
  • 1/2 lb. spaghetti noodles
  • 1/8 cup sesame seeds


Combine all sauce ingredients. Add 1/2 of the peanuts and set aside. Cook pasta. Drain pasta and add to sauce while tossing. Refrigerate to thicken for approximately 4 hours. When serving, top with remaining crushed peanuts and sesame seeds.

PRO TIP: You may add a bit of cayenne pepper for an extra kick.
