I am all about fruity cocktails. From Mimosas to Rossinis, I never met a bubbly and fruity cocktail I didn’t like. This Bellini recipe is perfect because it uses your favorite Prosecco with fresh peaches.
Bellinis are an Italian cocktail that contains two main ingredients: Prosecco and peach purée. It’s a light, fruity and refreshing fizzy beverage that pairs well with brunches and Italian menus.
Ingredients:
3 c (1 bottle) of Prosecco, chilled
3 c fresh or frozen sliced peaches
1/2 c peach juice
1 peach, sliced or diced (garnish)
Combine the Prosecco, peaches and juice to a blender
Cover and blend on high until smooth for roughly 1–2 minutes
Pour into glasses
Garnish with fresh sliced or diced peaches
*For a non-alcoholic version, substitute with sparkling cider or seltzer. If you use fresh instead of frozen peaches, add 3 ice cubes to the blender.
