Channeling that Little Mermaid feeling with this Watermelon Paiche Ceviché! It makes you feel like Ariel and eat like King Titan without making you look like Ursula. I’m so happy I get to make this “part of your world.” Full video is on IGTV now!
- 1/2 lbs Paiche or other white fish
- 6 oz fresh watermelon, cubed
- 4 radishes, half mooned
- 1 serrano pepper, sliced into circles
- 1 C red wine vinegar, divided
- Juice of 1 lime
- Black sesame seeds, for garnish
- Flaky salt
Cube watermelon into 1cm cubes. Thinly slice radishes and then halve them into half moon shapes. Slice serrano into rings and put all into a bowl. Pour 1/2 C of the red wine vinegar over and mix. Set in the fridge to marinate while you prepare the fish.
Dice fish into 1cm cubes. In a separate bowl add fish and mix with the remaining 1/2 C of red wine vinegar and lime juice. Let the fish marinate on it’s on for about 20-30 minutes or until it turns opaque.
