Garlic Parmesan Shrimp Scampi

The fresh flavors of garlic, parsley and lemon combined with succulent shrimp makes this classic a truly delicious dish. Shrimp cooks quickly on a hot skillet, so keep a close eye and as soon as they turn pink they are ready. Substitute pasta with zucchini noodles tossed in lemon zest for a bright and healthier option. 

This dish comes alive when paired with crisp white wines like Pinot Grigio or chilled Chardonnay.


8 ounces of spaghetti or linguine

1 tsp of crushed red pepper flakes

1 tsp of Cajun seasoning

1 tablespoon of olive oil

1/4 cup of white wine

1/4 cup of freshly squeezed lemon juice

4 tablespoons of salted butter

1 pound of medium, peeled and deveined shrimp

6 garlic cloves, pressed or grated

salt and freshly ground pepper, to taste

zest of 1 lemon

2 tablespoons chopped fresh parsley leaves

1 cup of freshly grated parmesan cheese


1. In a large pot of boiling salted water, cook pasta according to package instructions and drain well.

2. In a large, deep skillet, melt the butter over medium-high heat.

3. ADD shrimp, Cajun seasoning, olive oil, garlic and red pepper flakes.

4. Stir periodically, until fully cooked, about 3 minutes.

5. Stir in wine and fresh lemon juice; season with salt and pepper.

6. Lower to a simmer; remove from heat and stir in pasta, lemon zest, half a cup of the parmesan cheese and mix until fully incorporated.

7. Top with the last half cup of Parmesan cheese and chopped parsley.

8. Serve immediately and enjoy!
