Fudgy, black bean brownies?! Yep, its a thing and so delicious! I was so skeptical when I first heard about a brownie made from black beans but these brownies are AH-mazing! The best part is no one will ever know they are full of fiber from beans..score!
These brownies are free of gluten and other processed gunk. Plus a cup of black beans has half the calories that a cup of all purpose flour does, and more protein, 15gs to be exact. Who doesn't mind a little plant based protein boost to a delicious brownie!?
This recipe uses a boiled chia egg to replace eggs. “What’s a chia egg Chiababe?” Its a plant based alternative to an egg yoke. It’s super simple to whip up these “eggs!” Just 1 tbsp of ground chia seeds + 1 tbsp of lukewarm water, mix and let sit until it forms a gel like substance.

- 1 (15 oz) can of black beans, rinsed and drained
- 2 chia/flax eggs
- 1/2 of a large ripe avocado
- 1 tablespoon melted coconut oil
- 1/2 cup unsweetened cocoa powder plus 1 tablespoon
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoons pure vanilla extract
- ½ cup coconut sugar or ¼ cup maple syrup
- 1/3 cup vegan chocolate chips
Preheat oven to 350 degrees and grease an 8x8 inch non-stick square baking pan.
Melt chocolate chips on low until melted.
Place all ingredients into a blender. Blend until you get a smooth batter. If the batter seems thick feel free to add a little almond milk or water.
Pour batter into pan. Feel free to fold in some almond butter for a little extra kick!(plus protein and healthy fats) Bake for 20-30 minutes or until your heart desires! Let them cool a bit and enjoy!
