Miami's go-to healthy hot spot, Pura Vida, shares one of their delicious recipes.

It's no secret that Pura Vida is Miami's go to for a healthy, but also incredibly delicious meal. Whether you're coming straight from the gym, having a lunch meeting, or just want a fresh boutique ambiance for a light bite, Pura Vida is THE spot. With their numerous locations in Edgewater, South of Fifth, Miami Design District, Coral Gables, West Avenue, West Palm Beach, Aventura, and soon coming to Brickell, Bay Harbor, and Las Olas, Pura Vida is definitely taking over the health conscious culinary scene in Miami and South Florida. Founder Omer Horev, and his wife Jennifer, have curated a wellness-minded concept into a robust menu of brightly colored vegetable forward dishes with a variety of vegan and gluten free options. Fortunately for us, they are sharing one of their staple salad recipes that will surely be added to your at home rotation of go-to meals. 



Arugula - 2 oz

Kale, chopped - 1 oz

Mint, chopped - 0.2 oz

Micro cilantro - 0.2 oz

Parsley - 0.3 oz

Scallions, chopped - 0.5 oz

Jalapeno, chopped - 0.5 oz

Quinoa, cooked - 4 oz

Walnuts - 1 oz

Feta, crumbled - 2 oz


1. Add all the ingredients to the mixing bowl (except for the feta).

2. Add the dressing (apple cider vinaigrette). Mix well.

3. Add mixed ingredients into the ceramic bowl.

4. Add feta evenly over salad and serve.
