Recipes to Use Up Your Fresh Berries

WHIP UP A BAKED TREAT BEFORE YOU BERRIES GO BAD

I recently bought a ton of blueberries and raspberries because they were such a good price, and I thought I would be able to eat all of them before they went bad. But, things happen, we order take-out from restaurants, we forget the box of berries is shoved in the back of the fridge, and sometimes they start to turn! If you have soft, mushy berries or you just feel like you won't be able to finish them before they get to that point, here are some tasty treats you can bake with them.

Blueberry Muffin Bread

I have a such an addiction to blueberry muffins; however, I do not always have muffin liners available, and I only have one muffin pan, so baking muffins means multiple rounds and a lot of extra time for me. I found this blueberry muffin bread, and it was exactly what I needed! It's everything I love about blueberry muffins with way less effort. I especially love the inclusion of the sugary crumble topping, which is my favorite part of a muffin!

Raspberry Crumble Bars

"Sweet, soft, wonderfully juicy raspberry crumble bars.

With a soft oat-brown-sugar-butter cookie-like base, and a thick, sweet, and tart but not overwhelming layer of raspberries in the middle, tucked in by a light dusting of those subtle streusel-like crumbs on top.

Mini Strawberry Cheesecakes

"I started with a crust made with vanilla wafer cookies. It has a little sugar added to it and some butter. It’s one of my very favorite crusts. It’s just a bit sweeter than a graham cracker crust. You could certainly swap them out for graham crackers, if that’s what you have on hand, but if you’ve never tried it I would suggest you do. SO good!"
