We love the day-after-Thanksgiving leftovers as much as the next guy, but holiday leftovers taste even better when they're repurposed creatively.
Chef Laura Todd shares her delicious post Thanksgiving recipe for Easy Turkey Waldorf Salad.
1 cup diced left over cooked and chilled turkey
1 large red apple, cored and chopped
1/4 cup chopped celery
1/4 cup lightly toasted walnuts, roughly chopped
1/4 cup dried sweetened cranberries
1/2 teaspoon chopped dried thyme
1 Tablespoon Dijon Mustard
1/2 teaspoon of Salt & Pepper
1 cup of mayonnaise or plain greek yogurt
In a large mixing bowl combine diced turkey, chopped apples, chopped celery, walnuts, cranberries, and thyme. Stir in Dijon mustard and mayonnaise (or greek yogurt.) Salt and pepper to taste.
Serve this delicious salad on a bed of mixed greens or create a sandwich on a toasted croissant.
