A Green Juice a Day ...

Jesse Derbyshire of Mount Pleasant's Blend Juice Bar shares his go-to green juice recipe.

When it comes to healthy resolutions, Jesse suggests starting small. "Add one healthy thing to your daily routine, and remove one unhealthy habit each day. I started over 10 ears ago by adding just one green juice a day and cutting out soda."

There may be no better recipe to weave into your daily wellness routine than a classic green smoothie. Blend Juice Bar owner, Jesse Derbyshire, shares his favorite green elixir, which can be made with either a juicer or a high-speed blender. This recipe can be easily multiplied and made in a large batch, as needed. Fresh juice keeps for about 1 day, in the refrigerator. 

Yield: About 1.5 cups

Prep Time: 5 minutes


2/3 cup chopped fresh pineapple

2 to 3 teaspoons freshly chopped mint (or to taste)

1/2 cucumber, roughly chopped 

2 stalks celery, roughly chopped

1/3 cup baby spinach leaves

1/3 cup chopped kale (any variety you like)

2 tablespoons fresh parsley (approximately, or to taste)

Half a green apple, cored/seeded and roughly chopped

Juice of 1/4 lemon 

1/4-inch piece of fresh ginger, peeled 


Wash the produce.

Place all of the ingredients into a high-speed blender (or you can use a juicer), and add 1/2 cup water and 1/2 cup ice (if you want it cold right away). Blend on high speed until everything is broken up and well-combined. 

It will have the consistency of a smoothie at this point. Using a fine or medium mesh strainer, strain the mixture to remove any solids/pulp.

Serve right away, or refrigerate until needed. Fresh "living" juice will keep in the refrigerator for about a day in a sealed container.
