Summer-time Flat Bread and Tomato Chutney

For all you die-hard tomato fans, these babies are now in season!  Check out Chef Laura Todd's recipes celebrating these red gems. Pick some up during your next visit to the farmers’ market and whip up some tomato-licious recipes.

Summer Grilled Margarita Flat Bread Pizza Appetizer   

 (1) Bag of store bought Raw Pizza Dough (found in bakery section) 

 1 oz of All Purpose Flour 

 2 oz of Olive Oil 

 1 pinch of Course Sea Salt 

 1 pinch of Garlic Powder

 1 Ripe Heirloom Beef Steak Tomato (sliced thin and place on paper towel to absorb moisture) 

 6 oz Ball of Mozzarella Cheese (sliced thin) 

 1 pkg of Fresh Basil Leaves  

Step #1 Roll out your ball of pizza dough on dry and floured surface. Roll out and stretch the dough to 1/2 inch thickness. Cut the dough into (10) smaller pieces. 

Step #2  Let the dough rest for 10 min. Brush both sides of dough with Olive Oil & Sea Salt 

Step #3 Heat Grill --or-- Stove Top Grill Pan to Medium heat 

Step #4  Place dough on Grill for 1 to 2 min -- Flip and grill the other side 1 to 2 min -- Turn off grill when finished. 

Step #5   Place the pizza crusts on cutting board too cool and begin to add toppings. Distribute sliced mozzarella all over pizzas and then add your sliced tomatoes on top. Season with sea salt & garlic powder to taste. 

Step #6  Place pizza back on the warm grill to melt cheese. 2 to 3 min.

Step #7  Remove pizza from the grill and garnish with fresh basil leaves. Serve & enjoy! 

Easy Sweet & Tangy Tomato Chutney 

  • 1 pound ripe tomatoes, *chopped
  • 1 Tbsp minced garlic 
  • 1/4 cup chopped onions
  • 1/4 cup sugar
  • 1/4 cup white sugar
  • 1 cup white balsamic vinegar
  • 1/4 tablespoon pickling salt
  • 1 lemon, zested and juiced
  • 1/2 Tbsp of Parsley
  • Salt & Pepper to taste 


  • Combine all the ingredients in a heavy, nonreactive 4-6 quart pot.

  • Bring to a boil over high heat, then lower heat and cook at a low simmer (just a few bubbles here and there) for 1-1/2 to 2 hours until thickened. Stir often as it thickens to prevent scorching.

  • Serve chutney with Steak or Fish
