Summer Fresh Tomato Recipes

Tomato Pie

Ingredients

1-9 in deep dish pie crust

4 large tomatoes, peeled & sliced

½ c chopped fresh basil

3 green onions, thinly sliced

½ lb bacon, cooked, drained, & chopped

½ tsp garlic powder

1 tsp dried oregano

½ tsp crushed red pepper

2 cups shredded Cheddar cheese

¼ c mayonnaise

Directions

1. Preheat oven to 375 degrees

2. In alternating layers, fill pastry shell with tomatoes, basil, scallions, bacon, garlic powder, oregano, and red pepper.

3. In a small bowl, mix cheese with mayonnaise. Spread mixture over top of pie. Cover loosely with aluminum foil.

4. Bake covered for 30 minutes. Remove foil and bake an additional 30 minutes.

5. Serve warm or cold.

Baked Tomatoes

Ingredients

4 ripe vine-ripened tomatoes

2 tbs olive oil, plus more for tossing and drizzling

Salt & pepper

¾ c panko breadcrumbs

¼ c grated Parmesan

1 tbsp finely chopped fresh parsley

1 clove garlic, finely chopped

1 shallot, finely chopped

Pinch red pepper flakes

Directions

1. Preheat oven to 450 degrees.

2. Slice the tomatoes from core to core. Remove and discard the seeds and juice, and place in a casserole dish. Drizzle with olive oil; sprinkle with salt and pepper.

3. Combine olive oil, panko, Parmesan, parsley, garlic, shallots, red pepper flakes, salt, & pepper in a small bowl.

4. Fill the tomatoes with the panko mixture.

5. Bake 20 minutes.

6. Drizzle with olive oil before serving.

Peach & Tomato Caprese Salad

Ingredients

½ c white balsamic vinegar

1 garlic clove, minced

3 tbsp brown sugar

3 tbsp olive oil

¼ tsp salt

2 fresh peaches, cut into 1-inch pieces

2 lbs Heirloom tomatoes, cut into 1-inch pieces (remove seeds if guts are plentiful)

4 tbsp fresh basil, chopped

8 oz fresh mozzarella, cut into 1-inch pieces

Sea salt & freshly ground pepper

Directions

1. In a small bowl, whisk together vinegar, garlic, sugar, olive oil, and ¼ tsp salt.

2. Stir peaches, tomatoes, and basil together with the dressing.

3. Mix in mozzarella.

4. Sprinkle with sea salt and pepper to taste.

Yield 6 servings
