Grain Stuffed Baked Squash 

1 cup rice, farro, barley or hearty grain

1 quart veggie stock or salted water

Pine nuts, fresh herbs, dried cranberries, or roasted squash seeds

4 mini dumpling or acorn squash (about 4 inches)

Preheat oven to 350. Carefully cut the top off of the squash and set aside.  Scoop out the seeds, clean and roast to add to the rice mixture or snack.  If your squash is wobbly, cut a little off the bottom so it sits on a sheet pan.  Add 1 cup of stock or water to each of the squash and roast iuntil water starts to bubble (20-30 minutes).  Mix the dried rice, herbs, salt, and pinenuts together.  Remove the squash from the oven, and add ¼ cup of rice mixture to each squash.  Stir to incorporate the liquid with the rice, and place back in the oven for an additional 45 minutes, when the squash is tender and rice is cooked.
