Quick chocolate chip muffins
Ingredients
- 3/4 cup milk
- 1/3 cup vegetable oil
- 1 egg
- 1 tsp. vanilla
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tbsp. baking soda
- 1/2 tsp. salt
- 1 cup semi-sweet chocolate chips
Directions
- Preheat oven to 400F. Grease a 12-cup muffin tin or use paper liners.
- Combine wet ingredients in a small bowl until well blended.
- Combine flour, sugar, baking powder and salt in a large bowl.
- Pour wet ingredients in a small well in flour mixture. Gently combine, then fold in chocolate chips.
- Spoon batter into muffin tin, filling each one 2/3 full.
- Bake for 17-20 minutes until tops spring back when lightly touched. Serve warm.
