Whether it's whole hog, whole shoulder or the bone-in pork butts we smoke on-site every night, Carolina barbecue starts with real hickory wood. And authentic flavor can't be rushed, so we cook low and slow for up to 14 hours serving you barbecue that's worthy of our Carolina inspiration. Every sandwich is hand-pulled or sliced to order giving you that deep-down smoky flavor. In 2014, Old Carolina was named one of the Top Ten BBQ Chains in the USA.
