Using a cherished family recipe for hand-tossed dough, a sauce made from freshly crushed California tomatoes, and a blend of imported Italian cheeses, Anthony opened his first restaurant—Russo’s Pizza—in the early 1980s. “It was just 800 square feet,” he recalls. “I had a pizza oven, a dough mixer, and two tables. That’s it. I could only seat eight people.” A few years later, he launched Anthony’s Pizzeria in Clear Lake, Texas, eventually relocating to Houston. Over the next decade, Anthony perfected his menu rooted in traditional Italian family recipes and honed his signature New York-style pizza. In 1992, he opened Russo’s New York Pizzeria in downtown Houston, which quickly became a local favorite.
