Chef's Table

Tacos VS Burgers

This Spring has stretched us all to continue exploring things we perhaps wouldn’t have thought of doing if it weren’t for the New Normal keeping us close to our own backyards.

In the Bozeman food scene and at the very core of what a proper restaurateur is, close friends and colleagues Sean of University Burger and Joe of Nina’s Tacos often share a beer and chat about food-forward ways to entertain and inspire. Last month as they sat down for a well-poured beverage, this desire found them dreaming up and taking on the ultimate challenge...

  • Burger vs.Taco -

These two contenders are always delicious and both hold a place close to our hearts and hands. The complex yet simple versatility of the taco beckons a build your own spirit, while the meaty hand feel of the classic burger encourages you to roll up your sleeves and commit until you surrender.

Together the chefs and their partners decided on a list of 6 basic ingredients that pushed and pulled at our taste buds as they beg to be transformed into various cuisines.

In the ring on College Avenue, hosted by University Burger, we were joined by local guest judges to weigh the odds on these two old school contenders:

The building blocks of these mighty vessels showed up first: ‘Tortilla’ and ‘Bun’ were ready and willing to be transformed into heroes. Simple Ingredients were carefully selected-- Ground Beef & Fresh Pork Belly slipped off their hoods. Common produce joined the ring and the crowd salivated when Tomato and Cucumber adjusted their mouth guards and contorted into relishes and pickles. Jalapenos tightened their gloves for pops of big flavor as the fans took to their seats.

Punches were thrown. 12 rounds in total. Let’s hear what the judges had to say about this unparalleled match:

“The burger texture was perfect and the beef flavor of the patty was the star of the show.  The toppings were a clever mix of tang and sweetness, with far more depth of flavor than the simple pickle ketchup solution. I am all about texture and whatever the magic formula is to achieve mouth-watering burger decadence was achieved

“I love the whole idea of tacos.  Lighter than a burger and without too much protein or the carb load of a bun. A light-handed mix of texture, sweet and savory combinations and temperature contrasts.”

“Hard to pick a favorite honestly. A person cannot live a full life without indulging in the occasional burger.  For the daily indulgence, a soft shell taco prepared with creativity and quality protein is the power move.”

“The people preparing the food care this much about your experience, there are no losers.”

Saved by the bell! A unanimous decision was reached and rarely does a match end up this evenly. Between Michelin restaurants inspired Joe, and, raised on Cartoon's, Sean - winning wasn’t actually the point. Fun and delicious collaborations born by friendship and mutual support remain the cornerstone of our lively food community. Exchanging different perspectives and helping each other grow just becomes a little more exciting when you combine some healthy competition, a few beers, and everyone’s favorite ingredients.
