Barbara's Sweet Potato Pie

Serves six, 30 minutes prep time 

Ingredients

3 medium sweet potatoes

(about 1 pound)

1 unbaked 9-inch deep-dish pie crust

1-1/2 cups sugar

3 large eggs, beaten

1/2  cup (1 stick) butter, melted

1 cup whole milk

1 teaspoon vanilla extract

Directions

Bake the sweet potatoes at 350 degrees until tender, about 45 - 60 minutes. Cool, peel, mash then set aside.

Thaw or unroll the pie crust into a 9--inch deep dish pie plate.

Using an electric mixer, beat the sweet potatoes, sugar, eggs, butter, milk and vanilla extract until smooth and creamy.  Pour the mixture into the unbaked pie crust.

Bake at 375 degrees for 45 minutes.
