Normally my blog is full of more healthy recipes, but since I've been learning about flexible dieting, I figured I'd be a little more flexible with myself and my blog. When we deny ourselves a treat, we think about it, crave it, obsess over it—and I'm tired of obsessing over foods I want.
So lucky for us, this treat is so decadent that you can really only eat one at a time. They're so easy and fun to make that your kids can help too!
I keep a storehouse of all the recipes I try on my blog.
I first made honey bars when I was working at a summer camp. The original recipe made 144 bars! This one is scaled down to only 16 servings, each at a little over 200 calories. You can use local honey to beat out your spring/summer allergies too.
Ingredients for the Honey Bar:
- 2 c. flour
- 1 c. white sugar
- 1 egg
- 3/4 c. oil
- 1/4 c. honey
- 1/2 tsp salt
- 1 tsp baking soda
Ingredients for the Glaze:
- 1 c. powdered sugar
- 3/4 TBS mayonnaise (can also use buttermilk)
- 1 tsp vanilla
- 1 TBS water
Instructions:
Preheat your oven to 325 F. Grease a 9-in square baking pan.
Cream together all the ingredients for the honey bar until it is all one color. ***TIP: Use a 1/4 measuring cup for your oil first, then use the same one for honey - the honey comes out so much easier when the cup is coated in oil.
Press into the baking dish evenly, then bake for about 25 minutes until golden brown all over.
Cream together the ingredients for the glaze while the bars bake, and frost once the bars are cool.
