Silver Dollar Mushrooms
Ingredients
Mushroom Butter Sauce
¼ cup melted butter
1 teaspoon chopped rosemary
½ teaspoon thyme
¼ teaspoon lavender
¼ teaspoon salt
¼ teaspoon pepper
Seafood Stuffing
½ cup crab meat
½ cup lobster meat
½ cup shrimp
¼ cup red pepper, diced
¼ cup green pepper, diced
¼ cup shallots, diced
½ cup mascarpone
¾ cup Panko breadcrumbs
1/8 cup olive oil, plus 1 teaspoon for cooking peppers
½ teaspoon old bay seasoning
Directions

Combine mushroom butter sauce ingredients in a small bowl. remove stems from mushrooms and toss into the mixture.

Lay mushrooms on baking sheet and bake at 350 degrees for six minutes and cool.

Sauteé both peppers and shallots in a pan with 1 teaspoon of olive oil; set aside.

Mix all ingredients all seafood stuffing ingredients together (including the peppers) and form 12 balls.

Place one ball on each mushroom and sprinkle with grated parmesan cheese

Bake at 350 degrees for 12 minutes.
Pumpkin Encrusted Pork Chop
Ingredients
Crust
2 cups Panko breadcrumbs
1 cup salted pumpkin seeds
2 teaspoons pumpkin spice blend
Coating
1 – 15 oz. can of pumpkin puree
1 cup water
1 cup olive Oil
½ cup honey
4 tablespoon pumpkin spice blend
Pinch black pepper
Pinch granulated garlic
Directions

Place all ingredients for the crust in a food processor and blend; set aside.

Place all coating ingredients in bowl and use mixer to mix until incorporated.

Place pork chop in the coating first, then place in crust mixture until covered on all sides.

Heat oil in a skillet and cook each pork chop until golden brown on each side.

Bake pork chops in 350 degree oven for eight minutes for final cooking to 165 degree temperature.

Serve with your favorite vegetable and sweet potato casserole.
