Kingfish Gulf Shrimp Jambalaya
Ingredients
- 2 pounds 16-20 shrimp in the shell
- 2 tablespoons corn, peanut or vegetable oil
- 1 cup finely chopped onion
- 1 cup finely chopped green onions or scallions
- 1 cup finely chopped green pepper
- 1 cup finely chopped celery
- 1 tablespoon finely minced garlic
- 1 cup smoked turkey leg (shredded)
- 1 cup andouille sausage (diced)
- 2 cups crushed Roma tomatoes
- 1⁄2 teaspoon dried thyme
- 1 teaspoon dried crushed oregano
- 2 1⁄2 cups uncooked long-grain rice
- Salt to taste if desired
- Freshly ground pepper to taste
- 2 cups shrimp stock
- 1⁄2 cup finely chopped green onion or scallions, optional, for garnish
Directions
1. Peel and de-vein the shrimp. The shells are used to make stock
2. Heat the oil in a Dutch oven or large saucepan with a heavy bottom over medium heat. Add the andouille sausage cook, stirring constantly, until lightly browned.
3. Add the onion, green onions, green pepper, celery and garlic. Cook, stirring until wilted. Add smoked turkey and stir. Add the tomatoes, thyme and oregano, and bring to a boil. Stir in the uncooked rice. Add salt, pepper and shrimp broth. Reduce heat to medium-low, and simmer, uncovered, 45-60 minutes; add the shrimp and stir. Cook about 10 minutes longer or until it has thickened.
Creole Style Mussels
Ingredients
- 2 lb of fresh mussels
- 2 tbsp bacon fat
- 1⁄4 cup diced yellow onion
- 1/8 cup diced celery
- 1/8 cup diced green pepper
- 1 tbsp finely chopped garlic
- 1 tsp smoked paprika
- 2 tsp creole seasoning
- 1 cup crushed Roma tomatoes
- 2 cup dry white wine
- salt and black pepper to taste
Directions
1. In a stockpot over medium high heat add bacon fat and saute onion, celery, peppers and garlic until wilted. Next add in smoked paprika, creole seasoning, tomatoes and white wine and cook for 10 minutes.
2. Add mussels and place lid on the pot and cook until mussels are opened. Garnish with chopped green onion.
