Leftover Turkey + Bean Noodle Soup

WHAT TO DO WITH THAT LEFTOVER THANKSGIVING TURKEY!

Wondering what to do with your leftover turkey after you have already made your turkey sandwich? Make it into a yummy soup! Then you can freeze it for another cold winter's night as well. I like making the most of my food and not letting anything go to waste. This recipe helps re-create that leftover turkey into a new healthy dish that everyone will love! You can also adapt this recipe to use chicken if you do not have turkey on hand.

Recipe:

Serves: 6-8

Ingredients:

  • 3 Celery Stalks- cut in half lengthwise and then thinly sliced
  • 3 Carrots - small chopped
  • 4 Scallions - bottom part cut off and then thinly sliced
  • 3 tbsp Light Oil
  • 4 cups Chopped Cooked Turkey or Chicken (white and/or dark meat is both acceptable)
  • 2 - 15 oz Cans of Small White Beans - drained and rinsed
  • 1 tsp Salt
  • 1/4 tsp Ground Sage
  • 1/4 tsp Ground Thyme
  • Pepper to Taste
  • 8 cups of Unsalted Chicken Stock or Turkey Stock (if you can find it)
  • Juice of 1/4 of a Lemon
  • 1 package Egg Noodles
  • Good Italian or Sourdough Bread (optional for serving with the soup)

Directions:

  1. Using a large pot, add the oil, scallions, carrots and celery and cook on medium high heat until the carrots start to become tender, around 7-8 minutes; stirring occasionally.
  2. Add the stock, beans, ground sage, ground thyme, salt and pepper to the pot and bring to a boil. Cover and reduce heat to a simmer (medium low), cook for 55 minutes. 
  3. Add the turkey or chicken and the juice of 1/4 of a lemon. Cook for an additional 5 minutes. 
  4. While the soup is still cooking, cook the egg noodles in a separate small pot until al dente, making sure to season the water with salt. Once cooked, shock the pasta with cold water (rinse it with cold water) to stop the cooking process and reserve the drained pasta on the side for the end product.
  5. When the soup is done, taste and season with salt and pepper if desired. When serving, place some noodles on the bottom of your bowl and pour the soup on top of the noodles. Serve with great Italian or sour dough bread.
