Smokehouse Dry Rub Ribs

Nothing speaks of summer like the aroma of food being kissed by the flame of the grill as you sit on the back porch relaxing with friends sipping on your favorite ale. One summertime grilling favorite is a delicious rack of baby back ribs. Whether you are thinking of grilling your rack of ribs or smoking them, this recipe is sure to impress at your next dinner party. Pair it with a refreshing watermelon cucumber salad topped with mint, Dark Balsamic Vinegar of Modena and Basil Genovese infused olive oil. Add a refreshing American Sour Ale with Raspberries from Loveland Aleworks and you’ll have the whole neighborhood wishing they were there. 

Smokehouse Dry Rub Ribs

Serves: 4

Cook Time: 1 hour 45 minutes 

Prep Time: 30 minutes 

2 Racks Baby Back Ribs, about 2 ½ lbs - 3 lbs

6 Tbsps Olive & Herb’s Sweet Applewood Barbecue Rub & Seasoning 

3 Tbsps Olive & Herb’s Smokey Bacon Sea Salt 

⅔ Cup Olive & Herb’s Bourbon Barrel Aged Balsamic Vinegar, divided 

Prepare ribs by removing the silver skin from the underside of the rib.

Rub generously with BBQ rub and salt and let sit for at least 30 minutes and up to 24 hours.

Set the grill or smoker to 300F and add ribs meat side up. Close the lid and cook ribs for 1 hour.

Remove the ribs and cover in tin foil to prevent them from drying out. Add them back to the grill and cook for another 45 minutes.

Brush ribs with half of the balsamic and cook for another 30-45 minutes or until ribs are done.

Pull ribs out of foil, brush with remaining balsamic vinegar and serve.
