It's just not July until you've got an ice-cold beverage in hand. Fortunately, Dotsero-based Stoneyard Distillery recently opened their new tasting room on the 800 block of Glenwood's main drag, and they've got plenty of fresh flavors to quench your summer thirst. The distillery's unique Colorado beet sugar spirits make exceptional cocktails. Sample the goods barside, or grab bottles to go and make three of their signature concoctions at home.

Stoneyard Sunrise

  • 1.5 ounces Stoneyard Cin.Fire
  • 3 ounces orange juice
  • Dash of grenadine

Fill a nine ounce glass with with ice. Add Cin.Fire and orange juice. Top with grenadine and stir if desired, or leave to keep it pretty.

Hoppy Mojito

  • 1.5 ounces Stoneyard Colorado Silver
  • 1 ounce simple syrup
  • Half a squeezed fresh lime
  • Muddled fresh mint with ice
  • About 1 ounce water
  • Stoneyard Hoppy Hop Drop bitters

Drop mint into a shaker tin, measure ice with desired glass size (Stoneyard uses a 16-ounce glass) and pour ice into shaker tin with mint. Pour 1.5 ounces of Colorado Silver, and squeeze lime into shaker. Muddle the shaker tin ingredients until ice is well crushed. Add simple syrup, pour contents back into glass and top with a bit of water. Add a few dashes of Hoppy Hop Drop bitters, and pour the drink back and forth with the shaker once to mix. Garnish with a slice of lime.

Cacao y Limon

  • 3/4 ounce Stoneyard Cacao de los Muertos
  • 1 ounce agave nectar
  • Half a squeezed fresh lemon
  • Dash of water
  • Stoneyard Habanero Hot Drops bitters

In a nine-ounce glass, fill halfway with ice, the Cacao de los Muertos (the bottle is supplied with a spoon for measuring as it is 88 percent alcohol by volume), the fresh lemon, agave nectar, and a dash of water to taste. To make it really pop, add four or five drops of Habanero Hot Drops bitters. Garnish with a slice of lemon.
