Side Piece! Butternut squash, cherries, sage brown butta and toasted hazelnuts.
1 butternut squash, spiraled
1/2 cup dried cherries * 1/2 cup fresh Bing cherries * 1/2 stick unsalted butter
6 fresh sage leaves
1/2 cup hazelnuts, toasted
1 T grapeseed oil
Heat oil in a sauté pan over medium heat. Toss squash for 5-6 minutes until cooked through then add cherries and finish for 4 minutes until warmed. Meanwhile is a separate pan, melt your butter and sage until browned and sage is crispy. Watch closely and be careful not to burn the butter. We want it brown, not black. then toss everything together, plate it up, top with S+P and hazelnuts. DONE!
