Cinnamon Roll Christmas Cut-Out Cookies

I love baking, but I also run out of patience easily. Every holiday season, I think I'm going to bake gingerbread men or sugar cookies and take the time to decorate them. But I always end with a sugary glaze instead because once the baking is done, I want to be done!

This year, I got the idea to create a type of cut-out cookie that looks like it is supposed to have a sugar glaze so I don't have to worry about being lazy. (Full disclosure: This is the laziest recipe I have ever come up with, and I'm thrilled about it.)

These easy Christmas cut-out cookies are a spin on the classic snickerdoodle cookie and really do taste just like a freshly baked cinnamon roll. Here is what makes them so easy:

  1. You don't have to chill the batter.
  2. You don't use very many ingredients.
  3. Bake, glaze, and be done with it!

Cinnamon Roll Christmas Cut-Out Cookies (The Lazy Way)

Ingredients for the Cookies

  • 2 sticks of butter (1 cup)
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 3/4 cups flour
  • 1 teaspoon white vinegar (or use 1/2 tsp cream of tartar)
  • 2 tablespoons sugar (set aside)
  • 2 teaspoons cinnamon (set aside)
  • Coconut oil spray (or other baking spray)

Directions for the Cookies

  1. Preheat your oven to 350 F and prep a cookie sheet with cooking spray.
  2. Melt the butter in your microwave so that it is soft but not completely liquid. Mix it together with the sugar and eggs.
  3. Add the flour and white vinegar (or cream of tartar) and finish mixing.
  4. Combine the sugar and cinnamon that you set aside in a separate bowl.
  5. Sprinkle some extra flower on a clean surface and grab a handful of dough. Coat it with enough flower to spread it out and use a rolling pin to flatten it to your desired thickness.
  6. Cut out cookies and sprinkle each one with the cinnamon and sugar mixture after setting it on the cookie sheet.
  7. Bake for 8 minutes. Take them out of the oven and let them sit on the hot cookie sheet for about two minutes. (This helps them finish baking without getting too hard!)

Ingredients for the Glaze

  • 1 cup powdered sugar
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons warm water

Directions for the Glaze

  1. Microwave the butter so that it is fully melted.
  2. Add the sugar, vanilla extract, and warm water, and stir together with a whisk or a fork.
  3. If it is too thick, add a little bit more warm water at a time until the mixture is a liquid.
  4. Depending on how thick you make your glaze and how much you use on each cookie, you may want to double the amount you mix up.

Pour the glaze over the cookies and use the back of a spoon to spread it around. Let the glaze dry, and you're all done!

Now, to clean up the flour on the counter...
