I come from a very large Italian family. Nothing says the holidays like Tortellini Soup to me. Here's a recipe from my family to yours!
Mix three cups of flour and six eggs
Roll out to make thin dough
Run small batches thru the past machine
Cut out round circles with a cookie cutter
1/2 Pound of chop meat
1/2 Pound of ground turkey
1/2 Pound of ground sausage
Mix and cook all together then mix in grated parmesan cheese.
Add a tablespoon of nutmeg.
Put half a tablespoon of meat mixture in the center of dough circles and fold dough over into a half moon.
Pinch the two edges and roll two ends together.
Boil a pot of chicken broth and add tortellini.
Cook on low boil until pasta is cooked thoroughly.
Serve before for a memorable holiday dinner!
