Balsamic Parmesan Bacon Brussels Sprouts 

This Thanksgiving Turn That Tired Vegetable Into a Crowd Pleaser

Four years ago I started a blog called Astori-A-Us about my adventures with my now-husband Tom. He thought of the name because it sounded like the story of us and we lived in Astoria at the time. Our little story of us quickly became a blog about our vacations and all of our favorite places to eat.

Last year we were ready to start a family and decided to settle down in Bridgewater. Shortly after our move, the entire world went on lock down and our adventures soon became what takeout we were ordering, what show we were watching on Netflix, or — my personal favorite — what pregnancy craving I was having. During all this time at home, I was also able to start doing something I love again — cooking. 

I grew up watching my grandmothers cook and entertain. I quickly grew into a foodie, and now as an adult, nothing gives me greater joy than finding a bunch of random ingredients in my kitchen and creating a new recipe from them. That’s where this recipe came from. I first tried it years ago in my one-bedroom —  converted into a three-bedroom — Upper East Side apartment. 

This Thanksgiving, toss aside the usual suspects — I’m looking at you green bean casserole (even though I do love you) — and try a new dish instead. These Brussels sprouts are sweet, savory, and smokey. Here's a new take on an old and tired vegetable. Also, it's easy as pie to make, so you'll have left over time to actually bake your pie!

Balsamic Parmesan Bacon Brussels Sprouts

Ingredients: 

1 Lb Brussels Sprouts 

6 Pieces of Bacon 

1/2 Tsp Salt 

1 Tsp Black Pepper

1Tsp Garlic Powder 

1 Tbl Olive Oil 

Parmesan and Balsamic Glaze to Taste 

Steps: 

  1. Preheat oven to 400 degrees. 
  2. Cut ends of Brussels sprouts and cut again lengthwise.
  3. Cut bacon into small chunks. 
  4. Toss sprouts and bacon with oil, salt, pepper, and garlic powder. The salty bacon creates amazing fat so you won't need a ton of oil or salt. 
  5. Place on a baking sheet and roast for 20-25 minutes until sprouts are brown and crispy and the bacon is perfectly roasted. 
  6. Remove from oven and top with cheese and the balsamic glaze to taste. 

Bonus Tips


This recipe actually makes a fantastic weeknight meal too! Simply toss your sprouts with pasta.  Bacon and pasta are perfection together. Plus, the Brussels sprouts make you think you are eating a dinner that’s good for you —  which you kind of are. 

You can also make this dish lighter with turkey bacon or vegetarian with tempeh bacon. Just make sure you are watching it closely because turkey bacon burns quickly in the oven.
