Fried Cauliflower, Poached Egg, Smoked Caper Dressing 

1 Head of Cauliflower 

1 Whole Egg 

1T Green Capers 

1 Lemon Zested and Juiced 

1/4c Olive Oil 

3 T Smoked Olive Oil 

Pinch of Salt 

Pinch of Fresh Ground Black Pepper 

  • Heat fryer or pan of oil to 350 F. 

  • Bring a 2qt pot of water to a simmer. 

  • In a blender, lightly pulse the capers with the lemon zest, juice, olive oil and smoked oil. (Should have a broken texture not smooth). 

  • Carefully drop the cauliflower into the oil using a basket. 

  • After a minute, the cauliflower should be browning; remove from fryer. 

  • Toss the fried cauliflower with salt and half of the caper dressing. 

  • Crack egg into a small dish and gently drop egg into simmering water. 

  • Stir the water with a slotted spoon careful not to agitate the egg too much. 

  • After 2 minutes, using the slotted spoon, gently take the egg out the water. 

  •  Arrange cauliflower on plate and place the egg in the center.  

  • Drizzle remaining caper dressing around cauliflower. 

  • Finish with fresh ground black pepper and salt to taste.
