Native Arizonan Tim Colby has a passion for good food. After 16 years in the restaurant industry and four years of farming, the chef decided to share his love of mouthwatering flavors and good-for-you gourmet ingredients by developing his own line of spices. “I knew I could create recipes that aren’t basic,” Colby explains. “My wife, Rebecca, and I make gourmet blends with really high-quality ingredients.”
Timbo’s Spice debuted in May 2020. Each artisanal blend is mixed by hand in small batches to ensure consistency. No preservatives, fillers or extracts are used. Sixteen flavors are available, including local favorites Greek Spice; Steak Rub, Coffee Rub, featuring Peixoto coffee beans; and Jamaican Jerk, which incorporates real scotch bonnet peppers. “We offer freshly ground, aromatic, potent spices,” Colby says. “Everyone gets a very fresh product.”
