Favorite Ways To Keep Taco Night Healthy

There are so many options when it comes to dishing up a family fave, but in a lot of cases, taco night is a splurge. Here are tried and true go-tos for cleaning up taco night.

LETTUCE SHELLS

Ditch tortillas and use a head of iceberg lettuce to create shells. The element of crunch still remains, but the carbs are drastically decreased.

MAKE IT A SALAD

If preparing tacos for a large group, a salad or bowl approach is easy. Line the bottom layer of a low bowl with a crispy lettuce mix and add toppings from there. If missing the chips, simply crush a few over the top. If the meal feels too light, avocados are a great way to add protein.

GO FOR SHRIMP

Chicken and beef are usually top choices for taco night protein, but shrimp is a yummy alternative. Especially in the summer, grilled shrimp with a drizzle of lime juice hits the spot.

SWAP OUT THE RICE

Mexican rice is a taco night essential but there are alternatives. A pepper and onion medley is a healthy idea, or, simply prepare rice as usual but substitute cauliflower. 

SLOW-COOK THE MEAT

The crock pot is your friend. It not only makes taco night way quicker, but it’s easy to use adobo peppers, salsa verde, onions, garlic and more to enhance the flavor without adding salt.
