Craving Kimchi 

Jungwon Jin and Haesun You, rise each morning, seven days a week, to stock, display and prep the food and goods they purvey as owners and operators of the Medina Market, a.k.a. “the Green Store.” Jay and Ann, as they are known to the Medina community, have been doting on shoppers since  2011. The small scale and small town convenience of their leased corner store location, coupled with their reliable smiles and friendly small talk, has allowed them to form close friendships with their loyal customers, as evidenced by the display of holiday cards and steady supply of hand-delivered garden bouquets crowning the coffee counter. These everyday conversations about food, family and healthy lifestyles led them to introduce two popular Korean dishes to their menu. 

Fueled by customer requests, Medina Market now offers house made bibimbap bowls and jars of kimchi. Jay and Ann featured their Kimchi at this year’s Medina Days Concert in the Park because they are excited to introduce more people to this healthy traditional Korean food, a mix of fermented and seasoned vegetables. Ann uses “Mom’s Recipe,” a family recipe passed down from her Grandmother, which includes; Napa Cabbage, Korean radish, green onion, chives, minced garlic/ginger, Korean pear, apple, fish sauce, hot pepper, seaweed, mushroom and water. Ann recalls, “I always learned from my mother to prepare food with sincerity for our beloved family. Preparing food in a distant foreign country reminds me of warm memories with my family.”

Jay points out the many ways to work Kimchi into a meal, “We can also use kimchi as a main ingredient in dishes such as kimchi stew, kimchi pancakes, kimchi fried rice, kimchi dumplings, stir-fried kimchi, tofu kimchi…The list goes on as the fan base grows;

Delicious and has a bite - probably better with far more probiotics than anything you can buy elsewhere because it’s not processed. Fresh, homespun Kimchi. Based on effusive and glowing online reviews, I have to assume there is at least a little magic mixed in with the humble cabbage widely hailed health benefits inside every jar of Medina Market kimchi.
