Along with his business partner, Finto Antony, Bibin Joseph has created a restaurant group that spans Fairfield County and includes locations in Westport, Stamford, and Norwalk. Shrimp Mango Curry

1 Tablespoon Coconut Oil

1 pinch Mustard seeds 

2 Red dry chilis 

Curry leaves

1/2 Red onion, chopped

1/2 Tomato, sliced 

1/4 Tablespoon turmeric powder 

1 Pinch Chili powder 

2 Tablespoons  Coconut paste (Dry coconut, ginger & curry leaves grind together)

10 oz Coconut milk

1 oz Kokum water 

8 oz Water 

8 Shrimp 

5-6 Slices of mango

1/2 in Fresh ginger, sliced thin

Grape tomatoes to garnish 

Green chills, sliced to garnish 

Heat coconut oil in a pan medium to high heat. Add mustard seeds. Once the mustard splutters, add red chilis and curry leaves. Add chopped red onions and cook until browned. Next add sliced tomatoes, turmeric powder and the chili powder. Cook for a minute. Then add coconut paste & 5 oz of the coconut milk. Add the water and cook until a rolling boil. Add shrimp and raw mango slices. Cook for 4-5 minutes. Add the rest of the coconut milk and cook, covered for another 2-3 minutes. Garnished with curry leaves, grape tomatoes and ginger. Serve warm and enjoy!
