Wagyu: The Perfect Gift

“The business began in 2020 when our founder and CEO, Dave Dreiling, attended his first Wagyu auction. He bought four full-blood Wagyu and 28 Wagyu Embryos from his uncle’s dispersal sale. Booth Creek Wagyu became the basis for a vertically integrated beef production operation, from the genetics and ranch operation all the way to processing, sales and distribution, Andy Groneman, Director of Marketing, explained. “This would assure quality control through the entire process and allow us to keep everything local. Our ranch, processing facility and distribution center are all located within 20 miles of each other, so we have traceability through every aspect of the process. That allows unparalleled quality control. It’s all about the marbling, which contributes to a rich buttery taste and the beef’s tenderness. Wagyu beef is higher in Omega 3s and 6s than salmon and is lower in cholesterol than chicken. So not only does the marbling create an amazing product it also has great health benefits!”

Online sales and the Manhattan store began in 2021. A new retail store recently opened a few weeks ago over the summer in Overland Park. They are a vertically integrated producer and own the genetics, animals, ranch, feeding, processing and retail operations which allows for quality control.

“We know where every cut of meat comes from, and the quality grade on every steak. Booth Creek Wagyu sells beef cuts at the Gold, Platinum, and Reserve levels, with the higher levels featuring higher amounts of marbling,” Dave explained. “USDA Prime beef is 8-12% IMF (Intramuscular Fat), while a Platinum full-blood Wagyu is 26% IMF or more. Wagyu beef is higher in Omega 3s and 6s than salmon and is lower in cholesterol than chicken. So not only does the marbling create an amazing product it also has great health benefits!”

Wagyu cattle carry an enzyme called delta-9 desaturase, which converts unhealthy saturated fat into unsaturated fat and heart-healthy amino acids. This is why, as previously stated, Wagyu beef is loaded with Omega-3s and features one of the lowest cholesterol levels of any meat, including chicken and fish.”
