Creamy Rasta Pasta



1 lb boneless chicken breast (julienne)

3 bell peppers, red, green, and yellow (julienne)

1/3 cup parmesan cheese, freshly grated

2 cups heavy cream

1 pack minimum size penne pasta

1 tablespoon garlic, minced

1 cup chicken stock

6 tablespoons olive oil, plus butter

3 tablespoons Jerk seasoning

Salt and pepper



Season chicken breast with Jerk seasoning and let marinate, meanwhile, cook pasta according to package directions; drain and set aside. In a large skillet, melt butter/oil over medium-high heat. Sauté chicken breast on both sides, then set aside. Add more butter/oil into skillet; sauté peppers until soft; add garlic and fresh thyme into same skillet. Pour in cream and stock. Sprinkle more Jerk seasoning. Stir well and add parmesan cheese; stir until melted. Add in cooked pasta and stir well to fully coat. Garnish with chopped green onions.
