Growing up Stuffed mushroom caps have always been a dish at every holiday, party, or family gathering. As a kid they were my favorite appetizer and I always looked forward to eating them. Since I have gotten into cooking and creating recipes I thought, why not spice these up? I've always loved a good appetizer and side dish and this is my new favorite, say hello to the ULTIMATE Stuffed Mushroom Caps.
Ingredients:
- 8oz cream cheese
- 3 garlic cloves chopped
- Bacon - cut into bits
- 3 cups shredded cheddar cheese
- Scallions - cut up into small pieces
- "Stuffing" Mushrooms
Step 1: Preheat oven to 350'F. Rinse out your mushrooms and make sure they are clean and dry. Place them on a tray and bake them for 10 minutes. Take them out and start stuffing them with the garlic and cream cheese.
Step 2: In a bowl mix your cheese, chopped bacon and scallions. Then take each mushroom cap and hold it over the bowl. Start to fill the cap with the mixture and make sure you pack it in there then place back on the tray. It is ok if the cheese overflows, you want as much as possible on there. Then bake for 10-15 minutes or until each mushroom cap is brown and the cheese has melted.
