Strawberry Lemonade Popsicles

I may be dreaming of riding boots, sweaters, and cool weather - but in reality it's still in the 90's outside. When I'm trying to make it through yet another heat wave, one of my favorite easy treats to make are homemade popsicles. These bright and fun rainbow popsicle molds from Williams Sonoma make it super easy. We ended up making two different versions and both were equally delicious.

Version one:

Three easy steps, two ingredients, one delicious popsicle!

  1. Fill molds with lemonade
  2. Add fresh sliced strawberries
  3. Top with sticks and place in the freezer

Version two:

You still only need lemonade + strawberries, but for this version I would recommend using frozen strawberries.

  1. Add lemonade and frozen strawberries to the blender and blend until thoroughly mixed (if you're feeling extra add a splash of vodka for a boozy-twist on the popsicles!)
  2. Fill the molds
  3. Top with sticks and freeze

The hardest part was waiting for them to fully freeze so we could eat them. In my house 5 popsicles didn't last long. Strawberries not your fave? No problem! Sub in raspberries, peaches, blueberries you name it. Grab some popsicle molds, lemonade and fruit and enjoy that last little slice of summer.
