Relish Blends Chef-Driven Dining, Innovative Architecture, and Pickleball—All Built for the Community That Inspired It

Louisville, Colorado, is a town that values connection, creativity, and local flavor. And Relish stands as proof of what can happen when a small business grows directly out of the community it serves. Founders and owners Amy and Jeff Youngstrom built Relish with one idea in mind: create a gathering place by and for the surrounding community. “It’s not just part of our culture—it really is who we are,” says Jeff.

Relish’s June 2025 opening came after five and a half years of perseverance, belief, and community encouragement. “We just kept believing that if we built a place with quality, great food, great people, and a healthy, active lifestyle, people would come,” Jeff reflects. “And they have.”

That sense of belonging is woven into every corner of Relish, from its food hall filled with chef-driven concepts to its state-of-the-art pickleball facilities. And while the two components share a roof, they’re intentionally designed to be enjoyed together or completely on their own. “If you come for pickleball, you’ll enjoy a beautiful space—cushioned courts, temperature control, sound dampening, showers, and a full standalone pro shop,” Jeff says.

An array of massive windows lets you watch the matches while you enjoy the food hall, but you can’t hear the distinctive high-pitched pop because of the innovative and intentional soundproofing. That separation is one of Relish’s secret strengths. Whether someone wants a quiet lunch from a local chef, an energetic pickleball match, or both, the environment adapts. On the food-hall side, guests wander through warm lighting, textured materials, and sightlines designed to spark curiosity.

Architecturally, Relish is anything but a copy-and-paste concept. Contractors repeatedly told Jeff and his team they’d never built anything like it. While the building spans three acres, the interior unfolds in a sequence of intimate, discoverable spaces. “You’ll weave your way through the building to discover more and more around each corner,” Jeff says. Indoor-outdoor flexibility, cozy nooks, and gathering spaces nod to the Boulder County area's character and its love of activity and connection.

Among the seven locally owned eateries under the Relish roof is ArepasCO—a Venezuelan-rooted eatery that offers a taste of home with handmade arepas and dishes crafted with love. For a sweeter, lighter treat, there’s ACES, serving fruit-forward smoothies, acai bowls, and premium local ice cream—with dairy-free and vegan options. Craving something more classic comfort-food style? Lenin's Pizza offers wood-fired pies and other hearty fare, or the Magic Food Bus provides killer burgers and fries. And if you’re just after a good cup of coffee, the café side, Relish Coffee, provides handcrafted coffee drinks. Craft cocktails, local beers, and an eclectic selection of wines are available at the bar; I can personally attest that they make a mean Negroni.

On the courts, Relish is intentionally welcoming to both seasoned competitors and beginners. “We wanted to ensure that someone with the highest standards would love Relish—and someone who’s never had the opportunity or courage to play would enjoy it as well.” Their $5 intro class remains one of the most popular offerings, and youth leagues sell out quickly.

Thoughtful curation and design extend to Relish’s event offerings, which accommodate everything from six-person dinners to 250-person conferences, weddings, or parties. “By the time someone travels with us from the front door all the way to the back, they’ve created an image in their mind of how they’ll use Relish for their next great idea or event,” Jeff says.

Ultimately, the greatest joy for the Relish team is simple: watching people use the space as they imagined it. “When our team creates an opportunity or event and people come and enjoy it as we hoped, it’s amazing,” Jeff says.

As for what’s next? Expect plenty. “We have tournaments, expos, movie nights, live music, and so much more,” Jeff explains. But at its heart, Relish remains what it has always been—a place for people to gather, play, eat, and feel at home.
