Fruit Flavor in Every Bite

Sherbeth’s Sweet Shoppe: Whipping Up Creamy Sherbert in Fun Flavors

Homemade ice cream was a staple in Beth Glazener’s childhood home. Growing up in California, it was warm most of the year and ice cream was a favorite family treat.  It started with a hand-crank ice cream maker and Glazener along with her three siblings took turns rotating the crank until the ice cream was done. She even has an old photo of herself as a toddler, taking her turn at the crank. 

“I have always loved ice cream,” she says. “It is a nostalgic dessert because it makes me think of my childhood and eating it on warm days with my family.” 

A Culinary Sabbatical

Glazener spent the better part of her working career in the corporate sector. It wasn’t until later in life that she decided to go to culinary school to learn the science of baking and dessert. 

“I have always enjoyed cooking because of its creative freedom,” she says. “You don’t need exact measurements and you can add as little or as much as you want to a recipe. Baking is different. It is an exact science and is based on ratios. I wanted to learn more about it so I enrolled in Le Cordon Bleu and specialized in pastries and desserts.” 

After culinary school, Glazener continued to work in the corporate sector, but kept her new culinary knowledge in her back pocket. 

Inspired Recipes

In 2023, Glazener was inspired to create a sherbet with a creamy texture and a fruit-forward punch of flavor. She began researching and developing various flavor profiles and ingredient ratios to achieve her perfect sherbet. Using just six simple, whole ingredients, Glazener nailed down the perfect recipe.

Combining the various fruit sherbet recipes she developed, Glazener created a rainbow sherbet. Using eight different flavors including blood orange, boysenberry, lemon, lime, orange, pineapple, raspberry and strawberry, this sherbet was not like anything from a national brand. During a visit from her brother, she scooped him a dish for dessert, and he absolutely loved it, as did the rest of her family once they had a chance to try. 

That batch of sherbet, now named Fruit Salad, changed the course of Glazener’s future.

Glazener’s family decided she needed to start her own business. They all pitched in to help her create her new brand. 

“My niece and nephew came up with several names for my business and we all voted on our favorite,” she says. “I have even named many of my sherbet flavors after family and close friends. Some of them even helped to inspire new flavors like Hank (pineapple & brown sugar), G’s Special (grapefruit), and Frazier on Fire (marionberry & habanero).” 

For those who struggle with lactose, Glazener has also developed a vegan sherbet using plant-based cream (you will never know the difference).

Open for Business

With a focus on farmers markets and local boutique grocers, Sherbeth’s Sweet Shoppe was officially in business as of November 2024. Glazener also offers pick-up and delivery options to locals. 

Looking to the future, Glazener would love to expand her sherbet to more local grocers and eventually to the national market. Until then, you can find her retail and market locations at the socials below.
