This Chocolate Raspberry Cheesecake Is a Decadent Valentine Treat

Chocolate Raspberry Cheesecake

Ingredients

1 cup chocolate wafer cookies, ground into crumbs

3 Tbsp butter, melted

4 bricks of cream cheese (8 oz. each), softened

¾ cup sugar

½ cup sour cream

2 tsp pure vanilla extract

4 eggs

¾ cup semi-sweet chocolate chips, melted  

3 Tbsp Chambord (raspberry liqueur)

Instructions

Mix crushed chocolate wafer cookies with butter and press into bottom of a springform pan. Bake at 325 degrees for 10 minutes.

Mix sugar and softened cream cheese on medium until well blended. Add in sour cream and vanilla extract. Add eggs, one at a time, and mix well.

Remove 3 cups batter and mix with melted, but slightly cooled, chocolate chips. Pour chocolate cheesecake mixture over crust and bake for 30 minutes at 350 degrees. Reduce temperature to 325 degrees.

Add Chambord to remaining cheesecake batter and mix well. Pour over chocolate layer and bake another 30 minutes.

Let cool well and refrigerate several hours before serving. Lightly dust top with coco powder and garnish with fresh raspberries.
