Local Mexican Restaurant brings authentic flavors to the Northland

If you've lived in the Northland for any amount of time, you know that one of the best places for authentic Mexican food is Ixtapa Fine Mexican Cuisine. This Northland staple has been sharing their culture with us for years. Now, they share one of their favorite meals to prepare at home, Camarones a la Crema. Delicioso! 

Ingredients 

Sauteed Shrimp 

9 whole shrimp, peeled 

1/4 cup white wine 

1 tablespoon butter 

1 teaspoon finely chopped garlic 

1 tablespoon white onion, chopped

Kosher salt and Black Pepper to taste

Creamy Sauce 

1/2 cup heavy cream 

1/4 cup sour cream  

1 poblano pepper

1/4 cup cilantro 

1/2 julienned zucchini  

1/4 cup sweet corn

Oregano, salt and pepper to taste  

Directions 

In a pan, melt the butter and add garlic and onion; cook until translucent. Add the shrimp and season with salt and pepper.  Saute for around three minutes. Add the wine and let reduce for one to two minutes and reserve.      Char the poblano pepper over an open flame. Remove the skin and set aside. Blend the heavy cream, sour cream, cilantro, and the poblano peppers. Saute the zucchini with the sweet corn and add the creamy sauce mixture. Cook on medium heat for five minutes, add oregano, salt, and pepper if it is necessary. Serve with Mexican rice and black beans if you prefer.
