For Joseph Palladino, opening Palladino’s Steak & Seafood in Dallas brings him back to a city that has played a central role in both his career and his life. After decades in the Dallas restaurant scene, this chapter carries something especially personal: his own name is on the door.
“I’m thrilled to be back in Dallas with customers that I’ve known for decades,” Palladino says.
Designed by Rockwell Group, which also created the New York restaurant, the Dallas Palladino’s delivers the sense of occasion Palladino envisioned. A red piano anchors the Aria Room. Patterned floors, deep tones and low light give the space a theatrical elegance. Prime steaks and fresh seafood anchor the menu, joined by sushi, Italian specials, an extensive wine selection, a bourbon bar and craft cocktails. Tableside touches add another layer to the evening.
Palladino sees hospitality as a responsibility to the guest. Diners have plenty of choices, and when they choose his restaurant, he feels an obligation to give them an experience worthy of that choice. That mindset extends from the food and service to the pace of the evening and the way guests are welcomed back.
His approach reflects nearly four decades in hospitality across New York, Las Vegas and Dallas. A native New Yorker, Palladino worked in restaurants before serving with the New York Police Department early in his career. He says his years with the NYPD reinforced discipline, attention to detail and service. After leaving the department following a line-of-duty injury, he returned to hospitality and eventually came to Dallas, where he helped build Nick & Sam’s into one of the city’s best-known steakhouses.
Palladino’s Steak & Seafood debuted at Grand Central Terminal in New York in September 2025. The concept offers a modern take on the classic American steakhouse, with an emphasis on design, hospitality and a broad menu. Bringing Palladino’s to Dallas gave Joseph the opportunity to introduce the concept in a city where he already had deep personal and professional roots.
Preston Hollow offered the setting he wanted for the Dallas restaurant. Palladino saw an opportunity to bring an elevated steak-and-seafood experience directly into the community, creating a place for celebrations, business dinners, date nights and regular evenings out.
The Dallas Palladino’s carries the character of the New York concept while establishing its own identity in Preston Hollow. The Aria Room, named for Palladino’s daughter, accommodates larger gatherings and celebrations. The National is an intimate private dining room themed around Dallas National Golf Club. The main dining rooms are suited to special occasions and the familiar cadence of returning guests.
Palladino wants the restaurant to feel equally at home on an evening planned weeks in advance or on a night when dinner simply calls for something elevated close to home. That range is part of the appeal he envisioned for the neighborhood.
The name on the door carries personal significance. Palladino says others encouraged him to use his last name because of his long history in the Dallas restaurant business. The idea became especially meaningful when he considered what the restaurant could represent to his children.
“I wanted my kids to see me really work hard and create something special with their name,” he says.
That idea of building something lasting gives Palladino’s particular meaning at this stage of his career. He has spent much of his professional life creating experiences for other people. Now he has the opportunity to build a restaurant tied directly to his name, the people closest to him and a community that has become part of his life.
When asked what he is most thankful for, Palladino points first to his children and then to the opportunities that have carried him through his career.
“I’m thankful for the opportunities I’ve been given,” he says.
Palladino’s brings those parts of his story together: a return to Dallas, a new chapter in Preston Hollow and the chance to create something his children can one day recognize as part of their own family legacy.
