Babci's Christmas Kołaczki

Delicate, fruit-filled Polish cookies that sparkle with sweet tradition and powdered sugar perfection

These tender, jewel-toned cookies are a beloved Polish Christmas tradition—flaky, buttery, and dusted with snowy sweetness.

Ingredients:
½ cup butter (softened)
4 oz cream cheese (softened)
1 cup all-purpose flour
fruit filling (Solo® Raspberry, Almond, or Poppyseed)
1 cup powdered sugar

Directions:

  1. Prepare the dough: In a large bowl, beat butter and cream cheese until smooth. Gradually add flour and mix until a soft dough forms.

  2. Chill: Divide dough in half, wrap each portion in plastic, and refrigerate until firm—about one hour.

  3. Shape and fill: Roll one portion at a time on a floured surface to ⅛-inch thickness. Cut into 3-inch squares and place one teaspoon of filling in the center. Bring two opposite corners together and pinch tightly to seal.

  4. Bake: Place on an ungreased cookie sheet, one inch apart. Bake at 375°F for 10–15 minutes or until lightly golden. Cool completely, then dust generously with sifted powdered sugar.

Yields about 2½ dozen cookies.
