It is the best time to learn their secret to this refreshing southwest side dish.  You can add this dish to your backyard BBQ to spice up the table. You can even spice up your BBQ with some tortilla and sourcream and make yummy brisket tacos.

Recipes:

Black Bean Corn Salad 

1 can Black Beans

1 1/2 cups roasted corn

1 1/2 cups diced green chili

1 red bell pepper

1 red onion

1 tablespoon cilantro

1 tablespoon cumin

1 tablespoon salt

1/4 cup lime juice

Instructions:

preheat oven to 400 hundred degrees. butter and wrap corn in tin foils and place in oven for 30 minutes. 

while corn is cooking prep other ingredients. Drain and wash black beans. Dice red bell peppers and red onion. 

once the corn is thoroughly roasted let cool then cut corn off the cob. 

Combine all the ingredients in a large mixing bowl and stir.
